I've been told there is no flavour, or nutrition derived from the fins. That part is just for status. The flavour comes from whatever broth/spices they use.
I worked with a couple of Chinese girls and they had me eat a jellyfish dish for lunch.
It was very good but I'm pretty sure the taste came from the spices only.
So hot... the top of my head was wet when I finished.
