You've certainly nailed it - if a guy's in a romantic conversation in a bar, he's only thinking about one thing, no matter how much he pretends otherwise. The woman knows it, but wants him to pretend otherwise, at least for a while. Don't know why.

But what's all this two legs and a skirt business? As the evening progresses, one leg seems more than ample, maybe no legs by the end of the night. No skirt is OK too.

Because men and women want different things. Women want "eternity" and "sincerity and honesty", men want "satisfaction" and "please no drama, lets just get laid". So he pretends to be willing to give her "eternity" while she pretends "satisfaction" is good enough.
