Pretty cool story. But it seems more likely to me that he's not thinking that logically or strategically. Stabbings are in the news, he's probably just picking that up and acting out. You might be right about the randomness of it. The convert thing seems extremely unlikely based on the fact that police are unable to find any connection to Islamic groups, but are unable to even find connections to Islamic individuals:

If we are to believe that he is a recent convert, it seems unlikely that police are unable to even establish a connection to an Islamic individual. You would think there would be some type of communication with a Mosque or at least a person.
